There are different wheats out there... I grind my own and use one called Prairie gold.  You can order the prairie gold flour from

I buy the wheat berries for my flour through a local food co-op that buys from www.cfnl.org
 
Anyway, thought that that might give you a little more info.  The prairie gold is a milder wheat - I have tried the soft wheat and the hard white and prefer the prairie gold over both.  There is tons of info out there... just a thought..

It&#039;s definitely worth making your own bread - my family loves it... in fact, several batches will be done today, since it&#039;s cold outside.  :-)
